Freshly harvested mussels are lightly fried in olive oil and covered with in a classic Escabeche sauce, made with paprika, vinegar, oil, garlic and bay leaves that adds a little zing to their flavour. Simply serve Galician Pickled Mussels (Mejillones) with crusty bread and olive oil with a cool beer as a starter or snack.
